Macro Mediterranean Bowl
Layer the following: 
Arugula or fresh mixed greens
1/2 - 3/4 cup cooked arborio or brown rice
1/2 cup cooked cannellini beans, drained (canned may be used)
1 artichoke, quartered (canned packed in water used)
1/3 cup onions, diced
1/2 tomato, diced
1/8 cup capers
Optional garnish: Pine nuts toasted & ground hemp seeds (to simulate cheese)


Dressing: Mix the following ingredients: 1/3 cup olive oil, 1/4 cup balsamic vinegar, 1/4 cup water, 1/2 teaspoon sea salt
